

In this video from KetoFocus, Annie will show us how to make one of her favorite summer desserts, a Keto Strawberry Shortcake. You don’t have to only make it in Summer though as it is yummy enough to make at any time of the year.
We will start by prepping the Strawberries by washing and copping up 8 ounces of strawberries and putting it in a bowl. Add a teaspoon of sweetener of your choice to the strawberries. Also add one tablespoon of lemon zest to the bowl. Stir it all together and then set it aside.
Now we move on towards making the cake used in this Keto Strawberry Shortcake. Get out a small bowl and add one and a half cups of Almond Flour to it. Then add one and a quarter teaspoons of Baking Powder and half a teaspoon of salt. Whisk it all together and then set it aside as well.
Next up whip together in a large bowl, two eggs as well as one egg white. You can just use a hand mixer for this. Mix it until it is light and foamy and then add in half a cup of sweetener while mixing. Continue until the mixture thickens and becomes a pale yellow color (around three to five minutes).
Next gently fold in the egg mixture into the flour mixture by adding the flour mixture slowly to the bowl with the egg mixture in it. Now add in two tablespoons of heavy cream, two tablespoons of melted butter and 2 teaspoons of vanilla. Mix it all together until it is nicely combined and ready for the cake pan.
For this Keto Strawberry Shortcake recipe, Annie uses two 6 inch round cake pans. Grease the pans and also place a layer of parchment at the bottom of each. Pour equal amounts of cake batter into both pans and then bake it at 350 degrees for twelve to fifteen minutes. Remove the cakes from the pans by gently sliding a knife around the edges and putting it on a cooling rack. You want the cakes to cool completely before assembling the Shortcake.
While the cake is cooling you can move on to making the whipped topping. This topping does not contain any sweetener as the cake and strawberries already provide more than enough sweetness. To make the Keto Whipped Cream add two cups of Heavy Cream to a bowl. Also add one teaspoon of vanilla and then beat it together until it forms stiff peaks.
Now that all the individual parts are done it is time to assemble the Keto Strawberry Shortcake. Start with one of the cake layers and put on a layer of the strawberries on top of it. Top that with half of the keto whipped cream. Next add another shortcake round on that and repeat the process.
According the Annie, this cake is phenomenal in the summer time with fresh strawberries and you must definitely try it!
