These Keto Peanut Butter Bars are the perfect dessert for die-hard peanut butter lovers. They are super easy to make and don’t require any baking. Carolyn’s kids swear they taste just like Reese’s Peanut Butter Cups.

The first thing to do is to get a square baking pan. You can use a 9 X 9 inch or even an 8 X 8. Line the pan with either wax paper or parchment paper. I myself are leaning more towards parchment paper for this.

In a bowl put three quarters cup of butter. Add to this three quarters cup of peanut butter. Use an all natural, no added sugar peanut butter for this. Now we need to melt these together.

You can do this easily in the microwave but if you do not have a microwave you can easily just melt it in a pan on the stove top. Once they are nicely melted together whisk them up.

Now it is time to add the sweetener. Because this is a no bake recipe, Carolyn recommends powdered sweetener. Add half a cup of powdered swerve to the bowl. Wisk that in until it’s smooth.

Once the mixture is nice and smooth add a teaspoon of vanilla extract. Because the peanut butter used in the video was unsalted, Carolyn add just a little bit of salt. To me this is an absolute must.

And now for the magic ingredient. Use Peanut Flour! The one she uses is from Anthony’s and is roasted and partially de-fatted so it is very powdery and fine. Add two cups of the peanut flour to the mixture and stir it in using a spatula.

Once you have worked the flour in it will start coming together forming a big ball of dough. If it doesn’t do that you want to add a little more peanut flour until it does.

Transfer the big ball of dough into the baking pan that you lined with the paper. Using your hands at first start pressing it out into the pan. Once it is evened out it will still have your finger impressions on it. So to get that out use another piece of wax or parchment paper and put it on top. Now take a flat-bottomed glass or measuring cup and use that to make it nice and even.

Once it is to your satisfaction stick it in the fridge to cool and start preparing the chocolate topping.

In a glass bowl placed on a pot on the stove with with water, add 2 tablespoons of butter. Also add three ounces of Lily’s Dark Chocolate. Stir them until they are nice and melted and smooth. Grab the bars out of the fridge and pour the chocolate over the top, spreading it to the edges.

Make sure you are covering all of the yummy peanut butter dough with some of the chocolate. Put it back in the fridge until the chocolate is set which takes about an hour.

You can easily lift the slab out of the pan using the paper which will make it much easier for cutting. Using any sharp knife and cut it into squares.

I know I would find it hard to resist eating the whole lot as I cut it, but do try and save some for the family!
