

Today Joe Duff, The Diet Chef is making one of his favorite Keto Lunch Recipes, the Keto Chicken Salad.
The best part about this recipe is that you can whip it up right on the spot for lunch. Alternatively you can make it part of you Keto Meal Prep because it Meal Preps exceptionally well.
What Joe also loves about this Keto Chicken Salad is how easy it is to make and that it is so delicious too. It is flavorful, absolutely refreshing and has a huge amount to love!
In the video Joe is kind of cheating because he is using the breasts of a rotisserie chicken that he picked up from a local store. If you decide to go this route as well it is important that you remove the skin. After you have the skin removed proceed to shred the Chicken breasts into a bowl.
You can also use chicken breasts you cooked yourself for this recipe. You need to use 3 cups or 350 grams of chicken breast meat for the salad. Once done with shredding the chicken you can proceed to do the prep work for all the rest of the ingredients you will be adding to the salad.
Other ingredients you will need for this salad are:
Hard-boiled Eggs
Chopped Celery
Red Onions
Crushed Pecans
(You can add some mini-peppers for color too).
It is always a good idea to have these extra ingredients prepped beforehand, just to help speed things up.
You basically put all of the chopped and diced ingredients together, as can be seen in the video. Now that you have done that you can start making the salad dressing. This is a super quick and easy salad dressing with the following ingredients:
Keto Mayonnaise
Dijon Mustard
Rice Vinegar
Fresh Lemon Juice.
All that is left to do is serve. Enjoy!
