So first off lets go through all the ingredients you will need for this Keto Cheesecake Fat Bombs recipe:
- 1 Package or 8 ounces of Cream Cheese
- Half a cup of Salted Butter
- Three tablespoons of Coconut Oil
- A quarter cup of sweetener. For this video she is using Monkfruit Sweetener but Swerve should work just as well.
- Half a teaspoon of Vanilla Extract
- Cupcake liners or if you have it, silicone molds. Silicone molds can obviously be re-used whereas cupcake liners is for one use only.
Now to get started. Your butter and cream cheese needs to be at room temperature. Take them out of the fridge and leave them standing for about an hour and a half before you start on the recipe.
But the Cream Cheese and Butter in a mixing bowl and combine them by whipping them together with a hand mixer. You do this until the mixture is soft and fluffy.
Once everything is nicely whipped up, you add the vanilla extract, coconut oil as well as the sweetener to the mixture. Just put all of it in the bowl and whip it up one more time using the hand mixer. She mentions that heating and melting the coconut oil upfront made it much easier to mix in.
Now that the mixture is ready, you can start putting your cupcake liners in a cupcake or muffin pan. You can just place the liners into the cups on the pan, no need to grease it. You will now be piping your mixture into the cupcake liners.
If, like her, you do not have a piping bag, you can make a simple one out of a Ziploc bag. Fill the bag up with the mixture making sure you push it to the ends. Then just snip a tip off and you have your very own piping bag. Pipe a nice big swirl of the mixture into each of the cupcake liners.
From the mixture she made she ended up getting 12 Keto Cheesecake Fat Bombs. Freeze them in the pan for one hour. After the hour you can take them out and enjoy! No baking is required for this recipe. You however want to keep them in the freezer while as they will melt if you leave them out.
The keto snacks are perfect when you need a quick fat boost or are craving something sweet. Take them out of the pan and liners and store them in the freezer in a Ziploc bag, to crab when the sweet craving hits you!
