Breakfast is to me the most important meal of the day. Even if I do intermittent fasting, I would rather skip supper than breakfast. After all it is in its name: You are Breaking the Fast.

So any Breakfast Sandwich generally consists of the Bread, Bacon, Egg and of course Cheese. This specific one we are making today is a homemade version of the McDonalds McGridle.

The only problem on a Keto Diet with a meal like this is the Bread. You don’t want to spend all day making bread. To overcome this potential issue for this recipe we are making Microwave Mug Bread!

Custom Keto Diet

Make sure you use big a mug with a relatively wide brim as you want a decent sized bun. You start with one Tablespoon of butter. Melt the butter in the microwave in the mug for about 30 seconds.

Next up is 2 Tablespoons of coconut flour. It is recommended to not use Almond flour. If you do want to use Almond Flour you will need 6 to 8 Tablespoons.

Add a couple of taps worth of Baking Powder (Quarter to Half Teaspoon). Next a Tablespoon of Heavy Cream and about a Tablespoon of water. The final ingredient is an egg.

Add either more water or Coconut Flour depending on whether your mixture is too tight or too runny. The thinner you batter is, the longer it will take in the Microwave.

Pop in the Microwave for 2 to 3 minutes. Once done turn bread out on a cooling rack. It will be soft and moist. Put it aside to cool properly and start on the fillings.
