Avocado is a great vegetable to use in a Keto Diet, if used in moderation. This is why this Avocado Egg Salad Recipe from Continental Desi Kitchen is just perfect to keep your Keto Journey interesting and on track.

Avocado has become a super-food due its numerous health properties. For instance it contains more potassium than bananas (which is high in carbs), is loaded with fiber and is a very good source of vitamins.

You start by cutting one big avocado in half by rotating it while cutting against the pit. Make sure you clean the inside removing the pit and any of the pit skin that might be stuck to the avocado flesh. Using a spoon this can easily be done.

While the avo is still in its skin, cut it into strips and then only remove the outer skin. The strips now get cut into small portions to go into the Avocado Egg Salad. Note that since this was quite a big avocado, only one half of it was used. You do not want to overdo since too much of it will not work on a Keto diet.

Put all the avo chunks a put it aside in a bowl for now. It is time to prepare the salad dressing. Get a small bowl and start by adding one tablespoon of mustard sauce and then one tablespoon of mayonnaise. Add to this one teaspoon of lemon juice, one teaspoon of olive oil, one teaspoon of honey ending with some Oregano and Chilli flakes. The Chilli flakes is obviously optional depending on your preference.

Give it all a good stir and there you have it! The salad dressing is ready. Time to put this salad together.

Get a nice big salad bowl, adding diced Tomatoes, English Cucumbers and Onions. Add to that some chopped lettuce leaves followed by the chopped avocado pieces you prepared at the start. Season it now with some salt and black pepper and give everything a good mix.

After giving it a good mix add the salad dressing on top and give it another mix to make sure the dressing is evenly spread. Time to add two had-boiled eggs (You can prepare these earlier to allow it to cool). You can cut the peeled boiled eggs into any shape, but she cuts them length-wise into quarters.

Please the egg slices evenly spread out on top of the salad mix. Sprinkle some Oregano Powder on top. You can also now add a little bit more of the salad dressing on top.
