

A mug cake is a quick cake that you make in a coffee mug in your microwave oven. In this video from Naughty and Nice Kitchen, we see how to make a quick 1 minute Keto mug cake to help with those cake cravings. And it really makes for a great dessert option.
This specific mug cake is vanilla flavor and can be topped with sugar-free chocolate chips and fresh strawberries.
As with any mug cake recipe you start with a mug! In the mug put 15 grams or 1 tablespoon of butter. Proceed to melt this butter in the microwave. Add1 tablespoon of keto sweetener to the melted butter. No add two drops of stevia to the mixture. Mixing the two sweeteners makes this 1 minute Keto mug cake very tasty!
Add quite a bit of vanilla extract to the mug. This will mellow down the smell of the egg. Give everything in the mug a good stir.
Time to add in the flour. To make it Keto we use a nice Almond Flour, of which we will add 3 tablespoons of flour into the mug. After spooning in the flour add a pinch of salt and a quarter teaspoon of baking powder.
Mix all the ingredients together using a spoon. You should end up with a smooth and relatively runny batter. Once the batter is ready it is time to put the mug into the microwave. That didn’t take long, now did it?
You want to put the microwave for 1 minute on 1200 watts. If your microwave is slightly different you might want to play around with times until you get the right timing for your microwave. It is important that there is no raw batter left in the mug after cooking.
Get that great smelling mug out of the micro and prepare yourself for a tasty keto treat. Dig in with a spoon directly into the cake in the mug, or top it with some fresh berries to add another dimension to it.
